One of the most ancient, fascinating and authentic traditions of Apulia is the preparation of the yearly tomato sauce preserve (“Salsa”) in the early mornings of July and August.

The making of “Salsa” is a ritual that is still repeated in many houses here in the South and that rallies the whole family.
